We depend on pollinators to help our sunflower crop season after season, so it seemed a natural choice to launch into the world of honey. The term “raw honey” means it came straight from the hive, and was strained to remove the honeycomb, beeswax, and natural debris. Raw honey can become cloudy…but it's not going bad, it's crystallizing!
Raw honey is NOT filtered. Filtered honey goes through a process where it is heated and then rapidly cooled. This prevents it from crystallizing, but the heat also kills most of the enzymes, vitamins, minerals, and amino acids, and removes most of the pollen.
When honey crystallizes, it becomes thicker (if tiny crystals are forming) and cloudy (as more crystals form). Some crystallization results in a coarse sugary texture and some in a creamy texture. You can’t prevent it, but you can delay crystallization by keeping your honey in a warm location, like near the stove (not the cold cupboard against an outside wall).
You can still use crystallized honey! It will melt in hot drinks and can spooned into a measuring cup. If you need that flowing golden liquid, place the container of crystallized honey in a warm water bath of about 100°F (40°C) for about 15 minutes, until the crystals dissolve and the honey liquefies.
