Ultimate Chocolate Cake 


  • 1 3/4 cup all-purpose flour

  • 2 cups of sugar

  • 1 cup dark or dutch cocoa powder

  • 1 teaspoon baking powder

  • 2 teaspoons baking soda

  • 1 teaspoon salt

  • 2 large eggs

  • 1 cup buttermilk

  • 1 cup boiling water

  • 3/4 cup Smude's Sunflower Oil

  • 1 tablespoon vanilla extract

Fudge Frosting

  • 2 cups salted butter, room temperature

  • 2 1/2 cups powdered sugar

  • 1 1/4 cup dark or dutch cocoa powder

  • 2 teaspoon vanilla extract

  • 1/2 cup sour cream 

  • 1/2 cup hot water

  • 2 teaspoons vanilla extract

  • Pinch of fine sea salt

  • 10 ounces dark chocolate melted and then cooled to lukewarm

1.  Preheat over to 350 degrees and prepare 8 inch round pans with parchment paper placed on the bottom.

2. Add the flour, sugar, cocoa, baking powder and soda, and salt to a large mixer bowl. 

3. Add the buttermilk, Smude's Vanilla Oil, water, vanilla, and eggs to a medium-sized bowl and combine with the dry ingredients and beat until well combined.

4. Divide mix evenly among prepared pans. 

5. Bake for 40-45 minutes.

Preparing Frosting

1. In a large bowl, beat butter on medium speed for about 5 minutes.

2. Add powdered sugar and cocoa powder, mix until combined.

3. Add sour cream, hot water, vanilla, salt, mix on low speed until incorporated.

4. Add lukewarm chocolate and mix until smooth and glossy. Reminder: you only have about 30 minutes until frosting starts to harden. 

Assembling Cake

1. Level cake layers first if necessary (if there is any sort of domed top, you want to trim that off with a knife).

2. Place one layer, bottom side up, on a cake stand or serving platter. 

3. Spread 1 cup of frosting in an even layer, then place the second layer on top.

4. Cover the entire cake with a thin layer of frosting.
