Rhubarb Muffins

Yields 12 muffins

  • 1 1/2 C flour

  • 3/4 C brown sugar

  • 1/2 t baking soda

  • 1/2 t salt

  • 1/3 C Smude's Sunflower Oil

  • 1 egg

  • 1/2 C buttermilk

  • 1 t vanilla

  • 1 C rhubarb

  • 1/2 C chopped walnuts

Topping - 1/2 C brown sugar, 1/4 C chopped walnuts,            1/2 t cinnamon ​

1. Combine flour, sugar, soda, and salt.

​2. Combine Sunflower Oil, egg, buttermilk and vanilla. Add to dry ingredients.

​3. Fold in rhubarb and walnuts. Pour into greased muffin cups. Sprinkle topping on each muffin.

​4. Bake at 325 for 20-25 minutes.
