
Rhubarb Muffins
Yields 12 muffins

1 1/2 C flour

3/4 C brown sugar

1/2 t baking soda

1/2 t salt

1/3 C Smude's Sunflower Oil

1 egg
-
1/2 C buttermilk

1 t vanilla
-
1 C rhubarb
-
1/2 C chopped walnuts
Topping - 1/2 C brown sugar, 1/4 C chopped walnuts, 1/2 t cinnamon
1. Combine flour, sugar, soda, and salt.
2. Combine Sunflower Oil, egg, buttermilk and vanilla. Add to dry ingredients.
3. Fold in rhubarb and walnuts. Pour into greased muffin cups. Sprinkle topping on each muffin.
4. Bake at 325 for 20-25 minutes.
