Gingersnap Cookies

2 C flour

1 T ground ginger

2 t baking soda

1 t ground cinnamon

1/2 t salt

1/2 C plus 1 T Sunflower Oil

1 C sugar

1 egg

1/4 C molasses

1/3 C sugar for rolling cookie balls

Preheat oven to 350. Combine dry ingredients. In a separate bowl, combine wet ingredients, then add the dry to wet. Pinch off small amounts of dough, roll into a ball, then roll in sugar. Place on ungreased pan and bake for 8-10 minutes.
