Banana Pancakes

Makes 3 servings


  • 1 cup all-purpose flour

  • 1 tablespoon white sugar

  • 1 teaspoon baking powder

  • 1/2 teaspoon baking soda

  • 1/4 teaspoon salt

  • 1 overripe banana peeled and smashed

  • 1 cup milk

  • 1 egg

  • 2 tablespoons Smude's Pure Vanilla Sunflower Oil

1. Preheat a lightly oiled griddle over medium-high heat.

2. ​Combine flour, sugar, baking powder, baking soda, and salt.  Form into a bawl within the bowl and set aside.  In a separate bowl beat together egg, milk, and oil.  Pour liquid mixture into the dry mixture. Beat until smooth. Fold in the mashed banana.

3. Pour or scoop batter into the hot griddle using approximately 1/4 cup for each pancake.  Brown on both sides and serve hot.
